Medium lemon yellow colour. This champagne made from 100% chardonnay has a fine bouquet of elegant yeast notes, brioche and citrus fruit and pear aswell. On the palate its quite dry but more creamy and volouminous compared to the Gustan. Its medium bodied with a fine perlage but very nice balance between acidity and silky texture, long aromatic finish.
Valerie Goustan tends 6 hectares of mainly Pinot Noir vines in the village of Ville-sur-Arce in the Cote des Bar. The business was established in 1997 with her now ex-husband Thierry de Marne, and following their separation in 2007 she struck out on her own, renaming her wine Val Frison. Of the 6 hectares, 3.5 are for her own production, the rest go to the local cooperative. Certified biodynamic since 2003, the wines undergo neither filtering nor fining and no added sulphites are employed. The excellent Goustan is 100% Pinot Noir, spending 6 months in casks on the lees followed by 19 months sur latte, whereby the Champagne is aged in cellar but has not yet been disgorged. There is no dosage, making this a very dry and refreshing Brut Nature.
