Francis Boulard & Fille, ”Les Rachais” Brut Nature, 6 Bottle Case 75cl

Terroir: Plot "Hurtebise/Les Rachais" in the Massif de Saint Thierry. Sandy limestone soils.

Average age of vines: 43 years old

Vinification: Spontaneous alcoholic fermentation with indigenous yeasts. Vinified on fine lees in old small oak barrels with "batonnage" (beating in) on "Fruit" and "Flower" days. Malo-lactic fermentation takes place. Bottled on "fruit days" of the lunar calendar. No fining and no filtration.

Francis ran the family estate with his siblings for a decade before they became estranged over the farming practices he had introduced and decided to split the family holdings. Francis and his daughter Delphine, with their three hectares, finally farm the way they want, the biodynamic certification having been achieved in 2007. Their vines average around 35 years and the three grape varieties are almost equally represented in the vineyard.

A few must haves
