Solera Champagne? What on earth is that? L’Oublieé means ‘the forgotten barrels’. The cellar master had forgotten about a number of barrels which were found years later at the back of the cellar. The barrels were combined and co-fermented in a very large barrel to produce a blend of many years, and with the first draw of bottles will then be topped up each year in exactly the same way sherry achieves its complexity.
With a base wine from 2005 and another eight vintages blended in, Brut Nature refers to the extra dry profile of the Champagne. A rich and complex wine, it has a full and fruity nose with the blend of years providing a spectrum of fruits, particularly peaches and cream. The wine is mouth-coating and fantastic with food due to its crisp profile and length in the mouth.
