A beautiful Riesling from the capable hands of Dane Johns at Momento Mori. The Nikau Tolone comes from a small vineyard on Johns' farm, where vines averaging 27 years-old sit over sedimentary sandstone with a thin loam layer. The fruit saw 48 hours skin contact prior to a long, cool ferment, eight months maturation in stainless steel, and a further 18 months maturation in bottle. Alpine herbs, ripe lemon, a tart acidity, mint, pine, and lemon barley.
