This beautiful high altitude Fiano, one of the most age-worthy typical Campania varieties, is a sublime masterpiece of a natural wine shining with depth and expressiveness. The name comes from the first wine Guido made in Calitri, Don Chisciotte, and points to how everyone thought he was a crazy dreamer wanting to make a Fiano (an orange one too) at 800mt. The carefully hand-picked grapes ferment wildly and with no temperature control and are exalted by 60 days of maceration, distilling the true soul of terroir, only steel and minimum added SO2.
Otherworldly elegance and exquisite depth are expressed with notes of spiced elderflower, wild saffron, toasted chestnuts and smoked quince.
