Francis Boulard & Fille, ”Rosé de Saignée” Extra Brut, 6 Bottle Case 75cl

Equivalent to £55.00

Terroir: Clay and limestone terroirs from the Marne Valley.

Average age of vines: 40 years old

Vinification: The Rosé champagne is made using the technique called "Rosé de Saignée" (bleeding off) after a brief 10 to 12 hour maceration in order to obtain a greater extraction of aromas.

Francis ran the family estate with his siblings for a decade before they became estranged over the farming practices he had introduced and decided to split the family holdings. Francis and his daughter Delphine, with their three hectares, finally farm the way they want, the biodynamic certification having been achieved in 2007. Their vines average around 35 years and the three grape varieties are almost equally represented in the vineyard.

A few must haves
