Fanny Sabre, Beaune “Clos des Renardes” 6 Bottle Case 75cl

Fanny Sabre has established herself as a leading producer of quality natural Burgundy wines. She is only in her early thirties, but she has very good vines in some great appellations surrounding the ancient city of Beaune as well as a few plots in Pommard, Volnay and Meursault. Her cellar is in the small town of Pommard where she also runs a delightful cafe.

She is producing a range of wines in small quantities that are snapped up by the natural wine bars proliferating in Paris, New York and London.

 

"Coup de cœur" which translates to "her absolute favourite"! The Clos des Renardes shows structure, elegance and complexity of refined red fruit and earthiness.

Match it with: roast lamb, mushroom dishes or with delicate beef cuts.

Terroir: Clay-limestone soil

Age of the vines: 40 to 50 years old

Vinification: Grapes are hand-harvested // Maceration in stainless steel vats for 4 to 5 days // Gentle pressing // Natural fermentation (with indigenous yeasts) in oak barrels for 15 day // The ageing is in recent oak barrel for 15 to 18 months.
