Fanny Sabre has established herself as a leading producer of quality natural Burgundy wines. She is only in her early thirties, but she has very good vines in some great appellations surrounding the ancient city of Beaune as well as a few plots in Pommard, Volnay and Meursault. Her cellar is in the small town of Pommard where she also runs a delightful cafe.
She is producing a range of wines in small quantities that are snapped up by the natural wine bars proliferating in Paris, New York and London.
100% Chardonnay, natural wine, full yet very elegant oaked Chardonnay. The newest addition to the Fanny Sabre collection, this 100% chardonnay from the base of the Cote d'Or is supple, elegant with a hint of spice. Ripe and fresh with hints of clementine in youth, the freshness abounds but the texture and creamy character of the oak is starting to come through beautifully. With 3 or 4 years in the bottle, secondary flavours develop and the wine becomes more serious.
Terroir: clay- limestone soil
Age of the vines: 40 to 50 years old
Vinification: Grapes are hand-harvested // Direct press and cold maceration in stainless steel vats for 4 to 5 days // Natural fermentation (with indigenous yeasts) is in barrel // Ageing for 12 months on old oak vat // No finning.
