100% NEGRETTE VARIETY.
The vines are located on the highest terrace in the Tarn at around 200 m altitude.
The soils are alluvium composed mainly of pebbles, gravels, and silt. Not spared at the outset by modern cultivation and winemaking recipes, the estate refocused in the early 2000s on gentle cultivation techniques. The recipe is simple: Work in the vines as close as possible to the terroir, without fertilizers or weedkillers, favoring natural products, harvesting a very ripe, very healthy and sorted harvest.
In order to respect the typicality of the terroir and the grape varieties, we only use the natural yeasts present on the skin of the grapes at the time of the harvest. Fermentation takes place in stainless steel tanks, equipped with thermal control. After maturing for 11 months and racking twice, the wine is bottled in September.
