- Vinification: Gentle pressing, indigenous yeast fermentation. No sulfur added until first racking. Aged for 12 months in barrel in Burgundian barrels and demi-muids (25% new oak, 50% two-years-old, 25% three-years-old). Fining to tank for blending and stabilization period before bottling.
