Domaine Heresztyn-Mazzini was established in 2012 when Florence Heresztyn took over her family domaine in Gevrey-Chambertin with her husband Simon Mazzini (who originally comes from Champagne).
In total the domaine manages 5.5 hectares of vines predominantly in Gevrey-Chambertin, with a few other sites – Premier Cru Les Millandes in Morey Saint-Denis, a village Chambolle-Musigny and Grand Cru Clos Saint-Denis.
The domaine is becoming known for its meticulous attention to detail, with every viticultural and winemaking decision the result of considerable research. The domaine produces four village Gevrey-Chambertin cuvées, keen to show the variation between individual plots within the village. Many of the vineyards have impressively old vines, ranging from 70 to 90 years old.
The estate is farmed biodynamically and was certified organic in 2017. The domaine incorporates a high proportion of whole-bunch clusters in their fermentations – with up to 100% in their Premiers Crus Champonnets, Les Millandes, Grand Cru Clos Saint-Denis and even their village Gevrey-Chambertin Vieilles Vignes Les Songes. Extraction is done entirely by foot. Simon believes that using his feet he can feel where the fermentation is warm and cool and can accurately monitor the fermentation temperature throughout.
