From the banks of the Loire comes this elegant “pet-nat” or pétillant naturel wine made from 100% Cabernet Franc. The single fermentation in the bottle means that no artificial yeasts or sugars are added and this is, therefore, a refreshing, dry and super mineral pour. This ancestral method of sparkling winemaking allows the terroir to be fully expressed inside the bottle. Good examples of sparkling red wine are hard to find, and the Master of Wine student who makes this, coins is as what she is becoming renowned for.
It is a dry (not sweet!) sparkling red that has a deep red colour, very aromatic nose of morello cherry, raspberry and redcurrant. On the palate, the wine is both fresh and structured with a long and very aromatic finish with hints of spices and ripe fruit.
It is surprisingly versatile to pair foods with, BBQs, special occasions for aperitifs, it can pair with everything from grilled meats, pasts dishes, all the way to desserts with chocolate and red fruit.
