Calicantus make a natural and fun expression of their local blend into a 'pet nat' sparkling wine. This is a bone dry example where biodynamically farmed grapes are crushed and then bottled after vinification. The fermentation of the sugars into alcohol produce a small amount of CO2 which gives a delicate and easy-going party fizz to pop and enjoy. Because this wine is naturally made – no added sulphur and no filtration, the quality of the grapes needs to stand out.
Uncomplicated and tongue-tingling, the wine is a big zingy journey of cranberry and raspberry, orange zest all underpinned by a streak of minerality to cleanse your pallet. This is a super-dry wine with (unlike other Sparkling wines including Champagne) no dosage or sugar added. Something to be opened, quaffed, easily enjoyed and an excellent aperitif to get the night started..
