The Corvée Brut is produced from fine Chardonnay grapes grown on the steep slopes of the Cembra Valley at altitudes above 550m above sea level. The sandy, deep, stone-rich lands and the strong thermal excursions, typical of this high-altitude territory, condition the maturation of the grapes (slow and gradual) ensuring a correct acumen of the important mineral components and aromatics. The grapes are harvested manually at the start of September, soft-pressed, temperature-controlled fermentation in stainless steel tanks, followed by refinement of about 6 months. Finally, the wine matures on the lees for a further 24 months in 225lt French oak barrels. The resulting wine is extremely refined with beautifully smooth perlage and a broad and delicate bouquet resembling ripe fruits, custard and white chocolate. In the mouth there are light notes of almond and strudel with delicate hints of dried fruit, accompanied by a rich and persistent flavour.
