Predominantly Merlot (95%) with some Cabernet Sauvignon - the grapes are sourced from the oldest parcel of Merlot in Le Sondraie vineyard in Bolgheri. Vines are cultivated in sandy silt soils typical of the region. Merlot is havested in the middle of the September, and Cabernet Sauvignon towards the end of that month. After fermentation and maceration for 25 days the wine is aged for 18 months in French oak.
Tasting notes
Vibrant aromas of ripe cherry, redcurrant and rich dark fruit with notes of liquorice and cocoa. The palate is structured and complex with plum and bramble fruit and toasty oak characters. Juicy acidity and firm tannins on the long and polished finish.
Food match
Pasta with wild boar ragù (or failing that roast pork)! Good match with duck a l'orange too.
