Chardonnay grapes are sourced from vineyards in the Dolomite mountains. Here in the Valle dei Laghi and on the hills overlooking the river Trento, plantings are at 400-700m altitude. After hand-picking and whole bunch pressing - the wine is aged on its lees, in Cavit's dedicated sparkling wine cellar, for 24-36 months before disgorgement.
Fresh citrus and apple aromas with pronounced honeyed and savoury brioche notes. Persistent bubbles with lemony notes, ripe apple flavours, and further complexity from lees ageing. The finish is full and long.
Perfect as an aperitif or with white meat dishes.
