Nikos Karatzas is very much of the new generation of Greek winemakers, proud of the country's unique vines and determined to make world-class wine from indigenous grape varieties. The Oenops project is based in an old pie factory outside Drama in eastern Macedonia. Here Nikos experiments with various winemaking techniques including in this case amphorae and zero added sulphites. This is Xinomavro in a natural wine mould. It is bright and bursting with cherry fruit and subtle spice.
