Rémi and his wife Laurence started purchasing their first hectares of vineyards around Brouilly as early as 2006. Right from the start, Rémi would work the soils according to organic principles, selling his grapes to the local cooperative. At that time, he used ambient yeasts to start the fermentation process. In 2010, considering his wine was close enough to what he thought was a good wine, he decided to make and bottle his own. Thanks to the likes of Jean-Claude Lapalu and Jean Foillard who took him under their wing, Rémi Dufaitre was allowed into the Beaujolais Gang network. Rémi vinifies the traditional Beaujolais style using carbonic maceration. Maturation varies according to the cuvées. Before bottling and according to the vintage, Rémi adds no or only minimal doses of SO2 never exceeding 2mg per litre in order to
